I'm baffled as to why this guy has no sharp knives? They're all dull. I see comments about the "rusty" knife but the knife is actually just discolored from oxidation and moisture. It's not anything that will flake off or damage the food. Some knives are made of high carbon steel, in fact some of the best knives are. Therefore they have no treatment or poor quality metals to make them resistant. You must keep all high carbon blades oiled and dry of water or acidic liquid. I figured all Japanese chefs use the sharpest blades available as they make some of the best knives in the world. Using a chefs knife and hammer instead of a clever and doing it right.

Whoever did the cleaning and filleting of this fish needs to watch a few of the other videos on this channel, just to see and learn how to do it properly. He ( I assume it was a 'he') totally botched the job from descaling to skinning the fillets.... and giving his knife a decent sharpening wouldn't go amiss, either!
